একাদশ-দ্বাদশ শ্রেণির সকল ছাত্র-ছাত্রীদের রসায়ন বিজ্ঞান প্রথম পত্র সম্পর্কে ভালোভাবে ধারণা থাকা উচিত। এখান থেকে প্রতি বছর বিভিন্ন এডমিশন টেস্টে প্রশ্ন থাকে। প্রতিটি অধ্যায়ে সম্পর্কে পরিপূর্ণ জ্ঞান লাভ করা অনেক বেশি গুরুত্বপূর্ণ কেননা অধ্যায়গুলো থেকে যেমন এইচএসসিতে প্রশ্ন থাকবে ঠিক তেমনিভাবে পরবর্তীতে বিভিন্ন ভর্তি পরীক্ষা এগুলো কাজে লাগবে। আপনার মূল লক্ষ্য যদি ইঞ্জিনিয়ারিং বিশ্ববিদ্যালয় হয়ে থাকে তবে অবশ্যই অন্যান্য বিষয়গুলোর মত রসায়ন বিজ্ঞান প্রথম পত্র যথেষ্ট গুরুত্ব সহকারে পড়তে হবে।

১) ল্যাবরেটরির নিরাপদ ব্যবহার

ল্যাবরেটরি নিরাপত্তা বিধি: ল্যাবরেটরিতে কাজ করার আগে ল্যাবরেটরির নিরাপত্তা ব্যবহার বিধি মেনে অ্যাপ্রন গগলস, প্রয়ােজনমত গ্লাভস ও মাস্ক, পায়ে জুতা পরে নিতে হবে।

গ্লাস সামগ্রী ব্যবহার কৌশল: গ্লাস সামগ্রী ব্যবহারের কৌশল ও পরিষ্কার করার নিয়ম শিখতে হবে।

আয়তনিক বিশ্লেষণ কাজ: আয়তনিক বিশ্লেষণ কাজে ব্যবহৃত মেজারিং সিলিন্ডার, মেজারিং ফ্লাঙ্ক, পিপেট, ব্যুরেট, কনিকেল ফ্লাঙ্ক-এর ব্যবহার শিখে নিতে হবে।

কেমিক্যাল ব্যালেন্স: মাত্রিক বিশ্নেষণে রাসায়নিক পদার্থকে 0.01 - 0.00001 g পরিমাপের জন্য উপযুক্ত নিক্তিকে কেমিক্যাল ব্যালেন্স বলে। পল বুঙ্গি ব্যালেন্স ও ডিজিটাল ব্যালেন্স এ শ্রেণির ব্যালেন্স।

বুনসেন বার্নার ব্যবহার: ল্যাবরেটরিতে সব সময় বুনসেন বার্নারের অনুজ্জবল শিখা ব্যবহার করতে হয়। বার্নারের air hole বা বায়ু ছিদ্র পথ খােলা রেখে এ শিখা ব্যবহার করা হয়।

তাপ দেয়ার কৌশল: গােলতলি ফ্লাঙ্ক, কনিকেল ফ্লাঙ্ক, পাের্সেলিন বেসিন ও ওয়াটার বাথে তাপ দেয়ার কৌশল ও যন্ত্রপাতি ব্যবহার ভিন্ন।

বিকারক বা রিএজেন্ট (reagent): যে সব রাসায়নিক পদার্থ ল্যাবরেটরিতে কোনাে রাসায়নিক পদার্থ শনাক্তকরণে কঠিন বস্তু বা দ্রবণ হিসেবে ব্যবহৃত হয়, তাদেরকে বিকারক বা রি এজেন্ট বলা হয়। বিকারকসমূহ এসিড, ক্ষার, জারক, বিজারক, ধাতব মৌল যে কোনাে রাসায়নিক পদার্থ হতে পারে।

ল্যাবরেটরি পরিষ্কার করা: পরীক্ষা কাজ শেষে, বার্নারের গ্যাস সাপ্লাই বন্ধ করে, বর্জ্য পদার্থ সঠিক স্থানে ফেলে, কাজের টেবিল পরিষ্কার করে ল্যাবরেটরি ত্যাগ করতে হবে।

হ্যাজার্ড সিম্বল (Hazard Symbols): বিপজ্জনক রাসায়নিক দ্রব্যের সুনির্দিষ্ট সতর্কীকরণ প্রতীকী চিত্রকে হ্যাজার্ড সিম্বল বলে। আন্তর্জাতিকভাবে স্বীকৃত হ্যাজার্ড সিম্বল হলাে ১০টি। রাসায়নিক দ্রব্য উৎপাদনকারী প্রতিষ্ঠান BDH, E.Mark, Aldrich তাদের প্রস্তুতকৃত রাসায়নিক দ্রব্যের বােতলের লেবেলে সংশ্লিষ্ট হ্যাজার্ড সিম্বল ব্যবহার করে থাকে। রাসায়নিক দ্রব্যের প্যাকেট খােলার আগে হ্যাজার্ড সিম্বল দেখে সতর্ক হতে হয়।

সেমিমাইক্রো ও মাইক্রো বিশ্লেষণ (Semimicro and Micro analysis): যে বিশ্লেষণীয় পরীক্ষায় নমুনা পদার্থের প্রায় 50 mg থেকে 200 mg কঠিন পদার্থ অথবা দ্রবণের পরিমাণ 2 mL-4 mL ব্যবহার করা হয়, তাকে সেমিমাইক্রো বিশ্লেষণ বলা হয়। অপরদিকে যে বিশ্লেষণীয় প্রক্রিয়ায় 5 mg থেকে 20 mg কঠিন নমুনা বস্তু ব্যবহার করা হয়, দ্রবণের আয়তন 0.2 mL থেকে 1.0mL তাকে মাইক্রো বিশ্লেষণ প্রক্রিয়া বলা হয়।

ফাস্ট এইড বক্স (First Aid Box): ল্যাবরেটরিতে দুর্ঘটনাজনিত আহত ব্যক্তিকে তাৎক্ষণিকভাবে যে চিকিৎসা দেয়া হয়, তাকে প্রাথমিক চিকিৎসা বলা হয়। এজন্য ল্যাবরেটরিতে যে চিকিৎসা ব্যবস্থার সামগ্রী প্রস্তুত রাখা হয়, তাকে ফাস্ট এইড বক্স (First Aid Box) বলা হয়।

২) গুণগত রসায়ন

তড়িৎ চুম্বকীয় বিকিরণ: সব ধরনের দৃশ্য ও অদৃশ্য আলোর উৎপত্তি বিদ্যুৎ ও চুম্বক শক্তির বিকিরণে ঘটে। দৃশ্যমান আলাে হলাে বিদ্যুৎ চুম্বকীয় বিকিরণ রশ্মির সামান্য অংশ মাত্র। এ সব তড়িৎ চুম্বকীয় বিকিরণকে একত্রে তড়িৎ চুম্বকীয় স্পেকট্রাম (spectrum) বা বর্ণালি বলা হয়।

ফ্রিক্যুয়েন্সি ও হার্টজ (Hz): প্রতি একক সময়ে যেমন এক সেকেন্ডে কোনো তরঙ্গ রশ্মি দ্বারা অতিক্রান্ত দূরত্বের মধ্যে যতটি পূর্ণ তরঙ্গ সৃষ্টি করে, ঐ তরঙ্গ সংখ্যাকে ফ্রিক্যুয়েন্সি (৪) বলে। এর একক হলাে সেকেন্ড ইনভারস্; একে হার্টজ (Hertz) বলে।

ফোটন (Photon): পদার্থ হতে বিকিরিত শক্তি বিচ্ছিন্নভাবে ক্ষুদ্র শক্তির প্যাকেট হিসেবে বের হয়। বিকিরিত শক্তির এ একক পরিমাণকে ফোটন বা আলাের এক কোয়ান্টাম শক্তি বলে।

রেখা বর্ণালি (Line Spectrum): উদ্দীপিত পরমাণু থেকে নির্গত রশ্মি দ্বারা সৃষ্ট বর্ণালিতে সূর্যালোকের বর্ণালির মত সব বর্ণের আলাে থাকে না; কয়েকটি তরঙ্গদৈর্ঘ্যের আলোর সূক্ষ্ম রেখা দেখা যায়। তাই এরূপ রেখার সারিকে পারমাণবিক রেখা বর্ণালি বলে।

কোয়ান্টাম সংখ্যা: ইলেকট্রনের শক্তি স্তরের আকার, আকৃতি ও কক্ষ পথের ত্রিমাত্রিক দিক বিন্যাস নির্দেশক এবং ইলেকট্রনের অক্ষ বরাবর ঘু্ণন প্রকাশক রাশিকে একত্রে কোয়ান্টাম সংখ্যা বলা হয়।

অরবিট (Orbit): পরমাণুর নিউক্লিয়াসের চারদিকে দ্বিমাত্রিক বৃত্তাকার পথে ইলেকট্রনের আবর্তন করার এলাকাকে অরবিট বলে।

অরবিটাল ও নােড (node): যে এলাকায় আবর্তনশীল ও নির্দিষ্ট শক্তিযুক্ত ইলেকট্রন মেঘের অবস্থানের সম্ভাবনা 90 - 95% থাকে, সে এলাকাকে অরবিটাল বলা হয়। দুটি অরবিটালের মধ্যবর্তী যে এলাকায় ইলেকট্রন মেঘের অবুস্থানের সম্ভাবনা প্রায় শূন্য, সে এলাকাকে নােড (node) এলাকা বলা হয় ।

আইসােটোপ (Isotopes): যেসব পরমাণুর নিউক্লিয়াসে প্রােটন সংখ্যা (p) সমান; কিন্তু নিউট্রন সংখ্যা অসমান হওয়ায় ভর সংখ্যা (n + p) অসমান হয়, এদেরকে আইসােটোপ বলে।

আইসােবার (Isobar): যে সব পরমাণুর প্রােটন সংখ্যা অসমান; কিন্তু ভর সংখ্যা সমান এদেরকে আইসােবার বলে।

পাউলির বর্জন নীতি: একটি পরমাণুতে দুটি ইলেকট্রনের চারটি কোয়ান্টাম সংখ্যার মান কখনাে একইরূপ হতে পারে না। অন্ততপক্ষে একটি কোয়ান্টাম সংখ্যার মান ভিন্ন হতে হবে।

আউফবাউ নীতি (Aufbau Principle): পরমাণুর ইলেকট্রন বিন্যাসের সময় ইলেকট্রনসমূহ বিভিন্ন অরবিটালে তাদের শক্তির নিম্নস্তর থেকে উচ্চক্রম অনুসারে প্রবেশ করে।

হুন্ডের নিয়ম (Hund's rule): একই শক্তিসম্পন্ন বিভিন্ন অরবিটালে ইলেকট্রনগুলো সর্বাধিক সংখ্যায় বিজোড় অবস্থায় থাকতে পারে। এই সব অযুগ্ম ইলেকট্রনের স্পিন একইমুখী হবে।

UV রশ্মি: UV রশ্মি বিভিন্ন শনাক্তকরণ কাজে, জীবাণুনাশকরূপে, মেডিক্যাল ইমেজিং এবং অপটিকেল সেন্সররূপে 230-375 nm তরঙ্গদৈর্ঘ্যের UV রশি্মি নকল টাকা, পাসপাের্ট শনাক্তকরণ মেসিনে ব্যবহৃত হয়।

UV-fluorescent ink: UV- রশ্মি শনাক্তযােগ্য যে অদৃশ্য বিশেষ কালি ব্যবহৃত হয়, তাকে UV- ফ্লোরেসেন্ট কালি বলা হয়। ঐ অদৃশ্য কালিটি UV রশ্মির সংস্পর্শে নির্দিষ্ট বর্ণের দৃশ্যমান আলো ফুটিয়ে তােলে।

MRI পরীক্ষা: MRI মেসিনে চুম্বক ক্ষেত্র ও রেডিও তরঙ্গ শক্তির প্রভাবে মানব দেহের MRI পরমাণু (1H) বিভিন্ন অর্গানের ডিজিটাল ছবি কম্পিউটারের পর্দায় ফুটিয়ে তােলে।

শিখা পরীক্ষা: বার্নারের অনুজ্জ্বল শিখায় উত্তপ্ত ধাতব পরমাণু শিখা থেকে প্রয়োজনীয় তরঙ্গদৈর্ঘ্যের আলাে শােষণ করে এবং ঐ শাষিত শক্তি বিকিরিত হয়ে শিখায় বিশেষ বর্ণের আলো সৃষ্টি করে।

প্রাব্যতা ও দ্রাব্যতার গুণফল: পানিতে আয়নিক যৌগের প্রতি লিটার দ্রবণে উপস্থিত মােল পরিমাণ বা গ্রাম পরিমাণকে ঐ যৌগের দ্রাব্যতা বলে। দ্রবণে উপস্থিত ক্যাটায়ন ও অ্যানায়নের মােলার ঘনমাত্রার গুণফলকে ঐ যৌগের এব্যতার গুণফল K বলে। কোনাে দ্রবণে দ্রবের আয়নদ্বয়ের ঘনমাত্রার গুণফল তার দ্রাব্যতা-গুণফলের মান থেকে বেশি হলেই ঐ দ্রব অধঃক্ষেপ সৃষ্টি করে।

সম-আয়ন প্রভাব: কোনাে দুটি তড়িৎ বিশ্লেষ্যের মিশ্র দ্রবণে যে আয়নটি উভয় পদার্থ থেকে উৎপন্ন হয়, তাকে সম আয়ন বলে। সম-আয়ুনটি দর্বল তড়িৎ বিশ্লেষ্য পদার্থটির বিয়োজন-মাত্রা হ্রাস করে।

উর্ধ্বপাতন: যে সব কঠিন পদার্থের গলনাঙ্কের চেয়ে কম তাপমাত্রায় এদের বাষ্পচাপ বায়ুমণ্ডল চাপের চেয়ে বেশি হয় এবং ঐ বাষ্পকে শীতল করলে কঠিন পদার্থ পাওয়া যায়। এ প্রক্রিয়াকে উর্ধ্বপাতন বলে।

পাতন: তাপ প্রয়ােগে তরল পদার্থকে বাষ্পে রূপান্তর এবং শেষে শীতল করে পুনরায় একই তরলে রূপান্তর করাকে পাতন বলে। এক্ষেত্রে বাষ্পীভবন ও পরে ঘনীভবন প্রক্রিয়া ঘটে।

দ্রাবক নিষ্কাশন: উদ্ভিদের ফুলের পাপড়ি, পাতা, মূল ও বীজের মধ্যে থাকা জৈব যৌগকে জৈব দ্রাবকে শােষণ করে পৃথক করাকে দ্রাবক নিষ্কাশন বলে।

ক্রোমাটোগ্রাফি: উদ্ভিদের রঙিন বস্তুকে একটি স্থির মাধ্যমে শােষণ করে অপর সচল মাধ্যমে দ্রবীভূত হওয়ার প্রবণত বা বণ্টন সহগভিত্তিক পৃথক করার প্রক্রিয়াকে ক্রোমাটোগ্রাফি বলা হয়।

৩) মৌলের পর্যায়বৃত্ত ধর্ম ও রাসায়নিক বন্ধন

ক্ষারধাতু: গ্রুপ-1 এর ধাতুগুলাে পানিসহ বিক্রিয়ায় ক্ষার তৈরি করে বলে এদেরকে ক্ষার ধাতু বলে।

মৃৎ-ক্ষারধাতু: গ্রুপ-2 এর ধাতুগুলাে ক্ষার তৈরি করে এবং এদের যৌগ মাটির উপাদান বলে এরূপ নামকরণ হয়েছে।

অবস্থান্তর ধাতু: d ব্লকভুক্ত ধাতু, এদের কোনাে স্থায়ী আয়নে d অরবিটাল আংশিক পূর্ণ থাকে।

পর্যায়বৃত্ত ধর্ম: পর্যায় সারণির ইলেকট্রন বিন্যাসভিত্তিক পরমাণুর আকার নির্ভর ভৌত ধর্ম ও রাসায়নিক ধর্ম যেমন, গলনাঙ্ক, স্ফুটনাঙ্ক, যােজ্যতা, আয়নিকরণ শক্তি, ইলেকট্রন আসক্তি, তড়িৎ ঋণাত্মকতা, ধাতব-অধাতব ধর্ম ইত্যাদিকে মৌলের পর্যায়বৃত্ত ধর্ম বলে।

অরবিটাল অধিক্রমণ: কোয়ান্টাম মতবাদ মতে, পরমাণুগুলাে বন্ধন গঠন কালে পরমাণুর বিজোড় ইলেকট্রনযুক্ত অরবিটাল বিপরীত স্পিন অবস্থায় অধিক্রমণ ঘটায়। তখন দুটি নিউক্লিয়াসের প্রভাবে থেকে ঐ পারমাণবিক অরবিটালদ্বয়ের বন্ধন ইলেকট্রন মেঘ আণবিক অরবিটাল গঠন করে।

অরবিটাল সংকরণ: বিক্রিয়ার পূর্বে পরমাণুর একই শক্তিস্তরের প্রায় সমশক্তির অরবিটালগুলাে মিশ্রিত ও সম শক্তিতে বিভক্ত হয়ে সমসংখ্যক অরবিটাল গঠন করাকে অরবিটাল সংকরণ বলে।

সন্নিবেশ বন্ধন: নিঃসঙ্গ ইলেকট্রন যুগল দ্বারা দুটি পরমাণু সমযোজী বন্ধন গঠন করলে একে সন্নিবেশ বন্ধন বলে। মুক্তজোড় ইলেকট্রন যুক্ত পরমাণুটি একই বন্ধনের প্রয়ােজনীয় ইলেকট্রন যোগান দেয়; তাই এটিকে দাতা পরমাণু ও অপর পরমাণুকে, যেটি কোনাে ইলেকট্রন দেয় না, গ্রহীতা পরমাণু বলে।

পােলারায়ন: যৌগ অণুতে ক্যাটায়নের আকর্ষণে অ্যানায়নের ইলেকট্রন মেঘ ক্যাটায়নের দিকে সরে আসাকে অ্যানায়নের পােলারায়ন বলে। এর ফলে আয়নিক যৌগে সমযােজী বৈশিষ্ট্য প্রকাশ পায়।

ভ্যানডার ওয়ালস্ বল: নন বন্ডিং আন্তঃআণবিক বল বা আকর্ষণ- এ শ্রেণিভুক্ত; যেমন আয়ন-ডাইপােল আকর্ষণ, হাইড্রোজেন বন্ধন, ডাইপােল- ডাইপােল আকর্ষণ, বিস্তারণ বল ইত্যাদি।

হাইড্রোজেন বন্ধন: অধিক তড়িৎ ঋণাত্মক পরমাণু F, O, N এর সাথে যুক্ত H পরমাণুর মধ্যবর্তী বন্ধন অধিকতর পােলার হয়। এরূপ পােলার অণুর মধ্যে ধনাত্মক প্রান্ত ও ঋণাত্মক প্রান্তে এক দুর্বল বন্ধন সৃষ্টি হয়। এরূপ বন্ধনকে H-বন্ধন বলা হয়।

H-বন্ধনের গুরুত্ব: জীবজগতের টিকে থাকার জন্য যে সব বায়ােঅণু ভূমিকা পালন করে সে সব জৈব অণু ও পানি ইত্যাদিতে H-বন্ধন আছে। তাই বায়ােলজিক্যাল প্রক্রিয়ায় H-বন্ধনের ভূমিকা অনন্য।

অজৈব যৌগের নামকরণ: পুরাতন Common name পদ্ধতিতে অজৈব যৌগের নামকরণের পরিবর্তে বর্তমানে IUPAC এর Systematic Name পদ্ধতির ব্যবহার করা হয়।

৪) রাসায়নিক পরিবর্তন

গ্রিন কেমিস্ট্রি: গ্রিন কেমিস্ট্রি হলাে আন্তর্জাতিকভাবে অনুমােদিত বারটি নীতি সমন্বয়ে রসায়ন শিল্পের একটি গাইড লাইন, যা অনুসরণের মাধ্যমে গ্লোবাল ওয়ামিং হরাস করে উন্নততর পরিবেশ সৃষ্টি হবে।

বিক্রিয়ার হার: বিক্রিয়কের ঘনমাত্রা হ্রাস বা উৎপাদের ঘনমাত্রা বৃদ্ধির হারকে বিক্রিয়ার হার বলে।

সক্রিয়ণ শক্তি: যে পরিমাণ শক্তি অর্জন করে বিক্রিয়ক অণু বিক্রিয়ায় অংশ গ্রহণ করতে পারে।

প্রভাবক: প্রভাবক বিক্রিয়ার গতিকে বৃদ্ধি করে, নিজে গঠন ও ভরে অপরিবর্তিত থাকে।

এনজাইম: জীবকোষে উৎপন্ন টারসিয়ারি প্রােটিন, যা জৈব বিক্রিয়ার গতিকে প্রভাবিত করে থাকে।

সাম্যাবস্থা: উভমুখী বিক্রিয়ায় যখন সম্মুখমুখী বিক্রিয়ার হার ও পশ্চাৎ্মুখী বিক্রিয়ার হার সমান হয়, সে অবস্থাকে বিক্রিয়ার সাম্যাবস্থা বলে। সাম্যাবস্থা উভমুখী বিক্রিয়ার গতিশীল অবস্থায় থাকে।

সক্রিয় ভর: বিক্রিয়কের মােলার ঘনমাত্রা ও আংশিক চাপকে সক্রিয় ভর বলা হয়।

সাম্যধ্রুবক: বিক্রিয়ার সাম্যাবস্থায় উৎপাদের সক্রিয় ভরের গুণফল ও বিক্রিয়কের সক্রিয় ভরের গুণফলের অনুপাতকে সাম্যধ্রুবক বলা হয়।

পানির আয়নিক গুণফল: দুর্বল তড়িৎ বিশ্লেষ্য পানি থেকে সৃষ্ট হাইড্রোনিয়াম আয়ন (H;O*) ও হাইড্রক্সিল আয়ন (UH ) আয়নের মােলার ঘনমাত্রার গুণফলকে পানির আয়নিকরণ গুণফল (Kw) বলে।

এসিডের বিয়ােজন ধ্রুবক: প্রতি লিটার জলীয় দ্রবণে উপস্থিত কোনো এসিডের মােল সংখ্যার যে ভগ্নাংশ বিয়ােজিত মবস্থায় থাকে, তাকে ঐ এসিডের বিয়ােজন ধ্রুবক (Ka) বলে।

ক্ষারের বিয়ােজন ধ্রবক: প্রতি লিটার জলীয় দ্রবণে উপস্থিত কোনো ক্ষারের মােল সংখ্যার যে ভগ্নাংশ বিয়ােজিত অবস্থায় থাকে, তাকে ঐ ক্ষারের বিয়ােজন ধ্রুবক (Kb) বলে।

অনুবন্ধী ক্ষারক: অম্ন একটি প্রােটন ত্যাগ করলে সৃষ্ট ঋণাত্মক আয়নকে ঐ অক্নের অনুবন্ধী ক্ষারক বলে।

অনুবন্ধী অম্ন: ক্ষারক একটি প্রােটন গ্রহণ করার পর যা সৃষ্টি হয়, তাকে অনুবন্ধী অম্ন বলে।

দ্রবণের pH: হাইড্রোজেন আয়নের মােলার ঘনমাত্রার ঋণাত্মক বেস-10 লগারিদমকে ঐ দ্রবণের pH বলে।

বাফার দ্রবণ: যে মিশ্র দ্রবণে খুব স্বল্প মাত্রায় সবল এসিউ বা সবল ক্ষার দ্রবণ যোগ করলে ঐ মিশ্র দ্রবণের pH প্রায় অপরিবর্তিত থাকে তাকে বাফার দ্রবণ বলে।

অভ্যন্তরীণ শক্তি: কোনাে বস্তুতে সঞ্চিত অভ্যন্তরীণ স্থিতিশক্তি ও অভ্যন্তরীণ গতিশক্তি মিলে মােট শক্তিকে অভ্যন্তরীণ শক্তি বলে।

এনথালপি: কোনাে বস্তুকে উত্তপ্ত করলে এর অভ্যন্তরীণ শক্তি বৃদ্ধি পায় এবং কিছু শক্তি ঐ বস্তু দ্বারা সম্পন্ন কাজে ব্যয় হয়। এ উভয় প্রকার শক্তিকে তাপগতি বিজ্ঞানে এনথালপি বা বিক্রিয়া তাপ (AH) বলে।

পরমাণুকরণ তাপ: এক মােল একক বন্ধনে আবদ্ধ অণুকে গ্যাসীয় অবস্থায় পরমাণুতে পরিণত করতে যে তাপ শােষণ করে, তাকে ঐ পদার্থের পরমাণুকরণ তাপ বলে।

বিক্রিয়া তাপ: কোনাে বিক্রিয়ার সমতাযুক্ত সমীকরণ মতে বিক্রিয়কসমূহের সংখ্যানুপাতিক মোল পরিমাণে সম্পূর্ণরূপে বিক্রিয়ার ফলে উৎপন্ন বা শােষিত তাপের পরিমাণকে বিক্রিয়া তাপ বলে।

গঠন তাপ: প্রমাণ অবস্থায় কোনাে যৌগের এক মােল পরিমাণ ঐ যৌগের মৌলসমূহ থেকে উৎপন্ন হতে তাপের যে পরিবর্তন ঘটে, তাকে ঐ যৌগের গঠন তাপ বলে।

দ্রবণ তাপ: নির্দিষ্ট তাপমাত্রায় যথেষ্ট পরিমাণ (200 - 450 mol) দ্রাবকে এক মােল দ্রব দ্রবীভূত করে প্রস্তুত দ্রবণে যদি আরাে দ্রাবক যােগ করলে তাপীয় অবস্থার কোনো পরিবর্তন না ঘটে, তবে ঐ দ্রবণ প্রস্তুতকরণে তাপের যে পরিবর্তন ঘটে, তাকে ঐ দ্রবের দ্রবণ তাপ বলে।

প্রশমন তাপ: কক্ষ তাপমাত্রায় এসিড ও ক্ষারের বিক্রিয়ায় এক মােল পানি উৎপন্ন হতে যে পরিমাণ তাপের উদ্ভব ঘটে, তাকে প্রশমন তাপ বলে।

বন্ধন শক্তি: বাষ্পীয় অবস্থায় পদার্থের অণুর নির্দিষ্ট দুটি পরমাণুর মধ্যস্থ একই প্রকার এক মােল বন্ধনকে ভেঙ্গে পরমাণু বা আয়নে পরিণত করতে যে পরিমাণ গড় শক্তির প্রয়ােজন হয়, তাকে সংশ্লিষ্ট বন্ধনের বন্ধন শক্তি বলে।

ল্যভয়সিয়ে সূত্র: কোনাে বিক্রিয়ায় যে পরিমাণ তাপের পরিবর্তন ঘটে, ঐ বিক্রিয়াটি বিপরীত দিকে ঘটলে একই পরিমাণ তাপের পরিবর্তন ঘটে থাকে; তবে তাপ পরিবর্তনের চিহ্ন বিপরীত হয়।

হেসের সূত্র: যদি কোনাে রাসায়নিক বিক্রিয়ার প্রারম্ভিক ও শেষ অবস্থা একই থাকে, তবে বিক্রিয়াটি এক বা একাধিক ধাপে সংঘটিত হােক না কেন প্রতিক্ষেত্র বিক্রিয়া তাপ সমান থাকবে।

ক্যালরি: এক গ্রাম পানির তাপমাত্রা 1°C (14.5°C - 15.5°C) বাড়াতে যে পরিমাণ তাপশক্তি প্রয়ােজন হয়, তাকে এক ক্যালরি বলে। আবার । ক্যালরি = 4.186 J (জুল)।

৫) কর্মমুখী রসায়ন

টক্সিন (Toxin): ক্ষতিকর জীবাণু থেকে নিঃসৃত ফুড পয়জনিং-এর বিষাক্ত উপাদানকে টক্সিন বলে।

প্রিজারভেটিভস (Preservatives): যে সব রাসায়নিক পদার্থ নির্দিষ্ট মাত্রায় ব্যবহারের ফলে খাদ্যবস্তুতে ছত্রাক ও ব্যাকটেরিয়া জন্মাতে পারে না, খাদ্যবস্তু রক্ষিত থাকে, এদেরকে ফুড প্রিজারভেটিভস বা প্রিজারভেটিভস বলে। যেমন, বেনজয়িক এসিড, সােডিয়াম বেনজোয়েট।

বটুলিজম (Botulism): খাদ্যবস্তুর ক্যানিং ঠিকমত করা না হলে ঐ খাদ্যবস্তুতে ব্যাকটেরিয়া জন্মে এবং এদের থেকে নিসৃত বিষাক্ত উৎসেচক বা টক্সিন খাদ্যবস্তুকে পয়জনিং করে, এ অবস্থাকে বটুলিজম বলে।

স্পাের (Spore): ব্যাকটেরিয়া কোষগুলাে প্রতিকূল পরিবেশে (নিম্ন pH ও উচ্চ তাপমাত্রায়) দেহের চারদিকে প্রতিরক্ষা আবরণ সৃষ্টি করে সুপ্ত থাকে, এ অবস্থায় থাকা জীবাণুকে ঐ জীবাণুর স্পাের বলে।

জ্যাম-জেলি (Jam, Jelly): ফলের খােসা ছাড়ানাের পর ছােট ছােট বিচিযুক্ত ফলকে কুচি কুচি করে বা ক্রাসিং করে প্রয়ােজনীয় প্রিজারভেটিভসহ সংরক্ষণ করলে জ্যাম তৈরি হয়। আবার ফলের রস অথবা ফলকে সিদ্ধ করে ছেঁকে বিচিমুক্ত তরলকে প্রয়ােজন মত প্রিজারভেটিভসহ সংরক্ষণ করলে জেলি তৈরি হয়।

সিরাম (Serum): রক্তের জলীয় অংশ। শ্বেতকণিকা, লােহিত কণিকা ও প্লেটলেট পৃথক করার পর অবশিষ্ট জলীয় অংশকে রক্তের সিরাম বলে।

সাসপেনশন (Suspension): অসমসত্ত্বীয় মিশ্রণে অদ্রবণীয় পদার্থের কণাগুলোর আকার 500 nm-এর চেয়ে বড় হলে অস্থায়ী কলয়েড সৃষ্টি হয়, এরূপ মিশ্রণকে সাসপেনশন বলে; যেমন- রক্ত।

কোয়াগুলেশন (Coagulation): কলয়েড বা সাসপেনশন অবস্থায় থাকা অদ্রবণীয় কঠিন পদার্থের কণাগুলােকে আলােড়ক মেসিন দ্বারা কেন্দ্রমুখী বল প্রয়ােগে অথবা রাসায়নিকভাবে আন্তঃকণা বল যেমন আয়ন- ডাইপােল বলকে নষ্ট করে পিণ্ডীভূত করার প্রক্রিয়াকে কোয়াগুলেশন বলে।

লিপিড (Lipid): ট্রাইগ্লিসারাইডস বায়ােঅণু যেমন, অয়েল ও চর্বিসমূহ।

ফসফোলিপিড (Phospholipid): প্রাণিকোষের মেমব্রেনের প্রধান উপাদান; যেমন, লেসিথিন। এর প্রতি অণুতে একটি গ্লিসারিন অণুর সাথে দুটি ফ্যাটি এসিড অণু ও একটি ফসফেট মূলক যুক্ত থাকে।

অ্যামাইনাে এসিড (Amino acid): বায়ােঅণু প্রােটিনের একক হলাে অ্যামাইনাে এসিড। বিশটি প্রধান অ্যামাইনাে এসিড থেকে প্রাণিকোষে প্রােটিন সংশ্লেষিত হয়। এদের সাধারণ সংকেত হলাে R-CH(NH2)COOH; এক্ষেত্রে R-এর মান ভিন্ন হয়।

অসমসিস (Osmosis): অর্ধভেদ্যপর্দা (semipermeable membrane) দ্বারা আলাদা রাখা দুটি ভিন্ন ঘনমাত্রার দ্রবণের বেলায়, লঘু দ্রবণ থেকে দ্রাবক গাঢ় দ্রবণে প্রবেশ করার প্রক্রিয়াকে অসমসিস বলে। এ প্রক্রিয়ায় উভয় দ্রবণের ঘনমাত্রা সমান হয়।

হাইড্রোসল (Hydrosol): পানির মাধ্যমে তৈলের যেমন উদ্ভিদের বাকল বা ফুলের পাপড়ির মধ্যস্থ এস্টার মিশ্রিত থেকে কলয়েড তৈরি হলে, তাকে হাইড্রোসল বলা হয়। যেমন, গােলাপ জল।

হাইড্রোফিলিক (Hydrophilic): যে সব পােলার বা অ্যানায়নিক যৌগ পানি অণুকে আকর্ষণ করে পানিতে দ্রবণীয় হয় এদেরকে হাইড্রোফিলিক বলে। যেমন, পানিতে সাবান ও ডিটারজেন্টের অ্যানায়ন।

হাইড্রোফোবিক (Hydrophobic): অপােলার হাইড্রোকার্বন বা যৌগাংশ যা পানিতে আকৃষ্ট হয় না, এদেরকে হাইড্রোফোবিক বলে। যেমন, সাবান বা ডিটারজেন্টের হাইড্রোকার্বনের দীর্ঘ শিকল।

লিপােফিলিক (Lipohilic): 'লিপাে' শব্দের অর্থ হলাে চর্বি। অপােলার দীর্ঘকার্বন শিকল চর্বি বা তেলে দ্রবণায়, এ অংশকে লিপােফিলিক অংশ বলে।

অ্যাসিটো ব্যাকটর (Aceto bactor): অক্ষতিকারী ব্যাকটেরিয়াসমূহের অন্যতম হলাে অ্যাসিটো ব্যাকটর। এটি সুক্রোজ ও গ্রুকোজের ফারমেন্টেশনের প্রয়ােজনীয় এনজাইম নিঃসৃত করে।

পান্তুরিকরণ (Pasturization): খাদ্যবস্তুকে জীবাণুমুক্ত করার জন্য যে সব প্রক্রিয়া রয়েছে, যেমন, 70° থেকে 80°C তাপমাত্রা পর্যন্ত উত্তপ্ত করা ইত্যাদিকে খাদ্য পাস্তুরিকরণ বলা হয়।

Physics also makes significant contributions through advances in new technologies that arise from theoretical breakthroughs. For example, advances in the understanding of electromagnetism or nuclear physics led directly to the development of new products which have dramatically transformed modern-day society, such as television, computers, domestic appliances, and nuclear weapons; advances in thermodynamics led to the development of industrialization and advances in mechanics inspired the development of calculus.
